Makes 16 delicious pieces of indulgent flapjack with a perfect balance of sweet apricots, warming ginger, and creamy white chocolate.

A firm favourite at The Running Fox, these flapjacks are packed with wholesome oats, the zingy warmth of stem ginger, sweet apricots, and luxurious white chocolate chips. Perfect with a cup of tea or as an afternoon treat!

Instructions

  1. 1 Preheat your oven to 175 degrees, and line a 20cm square tin with greaseproof paper.
  2. 2 Melt the butter, golden syrup, caster sugar, soft brown sugar and chopped stem ginger in a pan.
  3. 3 Mix the syrup-butter mixture in with the oats so it all combines together.
  4. 4 Place half of the oaty mixture evenly in the bottom of the tin and press down with a spoon.
  5. 5 Then layer the apricot jam, diced apricots and white chocolate chips on top of the oaty mixture.
  6. 6 Spoon the remaining oaty mixture on top of the apricot mixture and press down with a spoon.
  7. 7 Bake for 30 minutes on 175 degrees.
  8. 8 Leave aside to cool once baked.
  9. 9 Whilst the flapjack is cooling melt your leftover white chocolate chips in a pan and keep aside for later.
  10. 10 Drizzle the melted white chocolate over your cooled flapjack, and sprinkle some leftover diced apricots on top.
  11. 11 Cut up into portions when the chocolate has set.
  12. 12 Taaaa-daaaa one Foxy Apricot, Ginger and White chocolate flapjack!

  • Perfect Texture: Press the oat mixture firmly into the tin for the base layer to ensure your flapjack holds together beautifully when sliced.
  • Ginger Selection: Use quality stem ginger in syrup for the best flavour. Finely chop it so it distributes evenly throughout the mixture.
  • Layering Tip: Don't be too generous with the jam layer - a thin spread is perfect. Too much will make cutting more difficult.
  • White Chocolate Drizzle: For professional-looking drizzles, put the melted chocolate in a small plastic bag, snip the corner, and pipe it over the flapjack.
  • Storage: Keep in an airtight container for up to 5 days. These also freeze brilliantly for up to 3 months - perfect for batch baking!
  • Serving Suggestion: Serve warm with a dollop of clotted cream for an extra special treat, or enjoy at room temperature with your favourite cup of tea.
