Makes 10 generous Foxy-sized scones, perfect with butter and your favourite toppings.

These classic cheese scones are quick to make and absolutely delicious. Serve warm with butter, or split and fill with your favourite sandwich fillings. The mustard powder gives them a lovely savoury depth!

  1. 1 Rub the flour, margarine/butter, baking powder, and mustard powder together to a fine crumb.
  2. 2 Add 120g of grated cheddar and 250ml of milk to form a dough. If the dough feels a bit dry, add a little more milk.
  3. 3 Roll out the dough to about 1 inch or 3cm thickness and cut out scones with a scone cutter. Lay them on an oven tray lined with baking parchment, brush them with a little milk and top them with some grated cheddar.
  4. 4 Bake in the middle of a preheated oven at 175°C for 25 minutes.
  5. 5 Why not pimp your scones and add your favourite things to the scone dough!
  6. 6 Try chopped fresh herbs or roast red peppers or sundried tomatoes & feta or some chopped cooked bacon and some more cheese!
